I’m currently planning a big trip overseas. With less than 2 months before I get on that plane, I’m deep in savings mode. It’s an interesting challenge to see the ways in which I can change my behaviour to save more. Hitting unsubscribe on all the daily emails I get from my favourite stores was a good move – the temptation of a flash sale or a discount code was quickly removed. I’ve scaled right back on going out for dinner and drinks, reminding myself that it will all be worth it when I’m sitting at a bar in New York or eating dinner in Paris. But bringing my lunch from home everyday is one thing I didn’t have to change at all. I’ve been in the habit of bringing a packed lunch to work for years and I really enjoy coming up with different lunchbox ideas for myself – no boring ham sandwiches here!
This is pretty typical of the kind of thing I throw together – a combination of whatever veggies I’ve got in the fridge, chopped or grated, some form of protein, fresh herbs if I have any, some seeds or nuts thrown in, and topped off with a squeeze of lemon and some olive oil. Here I’ve simply grated some zucchini and carrot, chopped a little red onion, thrown in some cherry tomatoes, green beans and baby spinach for the veggies. I’ve used a small tin of chickpeas for protein – for other protein ideas why not add a hard boiled egg, or cook some extra meat when you’re making dinner and toss into your awesome salad. I then added fresh mint and pine nuts, with lemon juice and a dollop of natural yoghurt for a dressing. So quick and easy! Here it looks a bit like some kind of healthy pie chart – but this was purely for styling purposes! Toss it all into a container and you’ll have the best lunch in your office and money in your pocket!
